What makes these vegan breakfast recipes healthy?
These delicious, and easy recipes are all plant-based. They do not contain cholesterol or processed sugar. The natural sugars are from plant-based sources.

1. VEGAN BREAKFAST RECIPE: TOFU SCRAMBLE
A protein-rich breakfast with tofu.
What you need:
- One package of firm tofu or extra firm tofu (depends on what you prefer)
- Garlic powder
- Onion powder
- Pink Himalayan salt
- Nutritional yeast
- Turmeric (the magic ingredient! It gives it that yellow color to make it look like scrambled eggs!)
Instructions:
This depends on how much you want to make. I use half tofu from one package two make two servings; one for Little Lyn and one for me. Add a generous amount of every flavor powder. I don’t have exact measurements because I add it as I sprinkle it on top of the white tofu parts.
2. VEGAN BREAKFAST RECIPE: BANANA SPLIT WITH YOGURT
What you need:
- 1 Banana
- Any flavor of plant-based yogurt (my favorite is Silk yogurt)
- Fresh sliced berries (like strawberries, blueberries, blackberries, and raspberries)
- Sprinkle granola
Other optional ingredient ideas:
- Fruit jam
- A bit of cinnamon powder
- Chopped nuts (like almonds, cashews, or pecans)
Instructions:
Peel 1 banana and cut it in half lengthwise. Add the plant-based yogurt between the banana slices. Sprinkle with a few berries, granola, and chopped nuts. So easy right?!
Tip:
For a little extra sweetness drizzle agave or maple syrup.
3. VEGAN BREAKFAST RECIPE: CHIA SEED PUDDING
What you need:
- 3-4 Tablespoons chia seeds
- 1 Cup almond milk (or any other plant-based milk like coconut, soy, rice, oat, cashew, etc.)
- 1/2 Tablespoon agave or maple syrup
Other optional ingredient ideas:
- Fresh berries or other fruit
- Granola
- Nut butter
- Cacao powder
- Sprinkle cinnamon powder
- Pinch of Himalayan pink salt
- 1/4 Teaspoon vanilla extract
Instructions:
Pour ingredients into a jar and mix very well until you see no clumping. Cover the jar and store it in the fridge overnight or for at least 2 hours. When you’re ready to eat it, top it with your favorite fruits and enjoy!
